Seems then that the GPSMAP 65 was correct!

Yes it was. As we discussed, it was due to the platform used (garmin explore). In other platforms such as strava, komoot, garmin connect, the total ascent given by the 65s seems more realistic (850-1000 m d).
One thing that I didn't figure out is how to see these values directly on the gpsmap 65s after saving.

Open the Activity (Recorded Activities) or Track (Saved Tracks) you just saved to view statistical data for that record.

Just find out the way:
Tracks , then view map,click on menu, review track.
Total ascent on the gpsmap was 1119m.

You can select Distance, Time, or Automatic.
I find 'Automatic > More Often' works well for me, but it may not for you.
If you want to match the watch recording interval, which appears to be 1 Hz, select 'Time > 1 Second'.
